I have been picking delicious ripe plums from two trees all week. Putting sliced stoned fruit in a salad has always been a go to lunch for me, but I wanted to try something else and make a dessert.
Martha Stewart had a recipe on her website for Roasted Plums with Creme Fraiche which I improvised, using some of my own honey as well as a bit of sugar and whipped cream instead of Creme Fraiche.
2 pounds plums
3 tablespoons light-brown sugar (you can use honey or agave too. I used 2 to 1 honey to sugar)
1 cup fresh whipped cream
Heat oven to 425 degrees. Slice plums in half, removing the pits. Toss the plum halves in sugar (I used sugar and honey); place in an ovenproof skillet.
Transfer skillet to oven and roast until soft and bubbling, 15 – 20 minutes. Remove from oven and let cool slightly.
Spoon plums onto plate and put a dollop of whipped cream on top.
Easy and delicious!
