I planted watermelon this year for the first time. So far I have harvested two huge melons. A vermin has eaten about a quarter of another melon, but I have left it in the garden in hopes that it will continue to eat that one and not the rest of them. I have used watermelon this summer in both a salad and as a dessert on a really hot day. The salad below is easy and refreshing!
Watermelon and Arugula Salad
1/2 pound washed baby arugula leaves
2 pounds cubed watermelon
1/3 cup extra virgin olive oil
1/4 cup fresh squeezed lemon juice
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 pound shaved Parmesan cheese
Whisk together olive oil, lemon juice, salt and pepper. In a large salad bowl, toss the arugula with the dressing. Add the watermelon and sprinkle with Parmesan. Toss lightly just to mix. Serves 6.
